Make a chocolate modelling

On 5 September 2013,we have been told by Chef Azrul that we gonna to do chocolate modelling.So what are you understand about chocolate modelling.Let me explain a simple explaination about chocolate modelling.Modelling chocolate is a chocolate paste made by melting chocolate and combining it with corn syrup and/or a simple syrup (made from table sugar and water). Primarily used by upscale cakemakers and  to add decoration to cakes and pastries.For more information you can go to this link: http://en.wikipedia.org/wiki/Modeling_chocolate

To do this chocolate modelling,you need some ingredients which is:
For the garnishes you need:
i) 500 gm dark chocolate


ii)175 gm  liquid glucose

iii) 100 gm heavy syrup


For the base and body of this chocolate modelling,you needs:
i) 1 bag of chocolate bar ( 500 gm)


Steps to make the chocolate modelling:
1) Chopped the chocolate bar first until to small pieces.

2) Melt the chocolate first using a double boiler method and stir it until blend then rest it for a while.


3)Then start to make the garnishes by,put dark chocolate into a mixer.


4) After that,start to put a liquid glucose and let it mix together.
5) Nextt,slowly put 100 gm of heavy syrup together .
6) Let it rest in chiller room about 40 minutes and wrap it with plastic wrap.

7) Then cut the body and base according to your design and shape.



8) After the chocolate being rest,you can make your own shape according to your own creativity, eg: roses,geometric shapes and others.

9)Glue the base,body and garnishes with the remaining of chocolate.

10) Lastly,you have finished your chocolate modelling :)
