How to make a pastillage?

On 5 September 2013,for this class we're going  to do a pastillage. But do you know what is pastillage about?Pastillage is a type of sugar-based dough used to make edible decorations . Though it’s edible, meaning that they can be eaten because they are made with edible product, it’s not recommended to eat them.So,let's back to the topic,i think all of us curious about how a pastillage is made?So this is the steps and ingredients to do a pastillage.

The ingredients:
1) 1 kg icing sugar

2) 10 gm gelatine  powder

3) 50 ml water

4) 50 ml vinegar

5) 1 bottle of colouring.


For royal icing ingredients:
i)2 nos egg white

ii) 350 gm icing sugar

Simple steps:
1) Mix egg white and icing sugar and beat it with a mixer until it firm.


The steps:
1)Mix the gelatine powder with water and vinegar.Stir it until it set.

2) Use double boiler method,heat it until it melt.
3) Then,mix icing sugar with gelatine and vinegar.
4) Mix it until it become a dough.

5)Then let it rest about 40 minutes.
6) Roll it until it become thin.

7) After that,shape and design with our own creativity.



8)To make our pastillage to become more attractive,add some colouring to a dough.
9)Glue a pastillage model with royal icing.

10) Lastly,you have finished your own pastillage model..








For the last class today, we will like to thank especially to all chefs that invovled in Pastry Artistry class for teach us and also give us a lot knowledge.But also not forget to thank to both my group members,Aliaa and Adilla and also my classmates that help us a lot during the class.
