How to make a pastillage?

On 5 September 2013,for this class we're going  to do a pastillage. But do you know what is pastillage about?Pastillage is a type of sugar-based dough used to make edible decorations . Though it’s edible, meaning that they can be eaten because they are made with edible product, it’s not recommended to eat them.So,let's back to the topic,i think all of us curious about how a pastillage is made?So this is the steps and ingredients to do a pastillage.

The ingredients:
1) 1 kg icing sugar

2) 10 gm gelatine  powder

3) 50 ml water

4) 50 ml vinegar

5) 1 bottle of colouring.


For royal icing ingredients:
i)2 nos egg white

ii) 350 gm icing sugar

Simple steps:
1) Mix egg white and icing sugar and beat it with a mixer until it firm.


The steps:
1)Mix the gelatine powder with water and vinegar.Stir it until it set.

2) Use double boiler method,heat it until it melt.
3) Then,mix icing sugar with gelatine and vinegar.
4) Mix it until it become a dough.

5)Then let it rest about 40 minutes.
6) Roll it until it become thin.

7) After that,shape and design with our own creativity.



8)To make our pastillage to become more attractive,add some colouring to a dough.
9)Glue a pastillage model with royal icing.

10) Lastly,you have finished your own pastillage model..








For the last class today, we will like to thank especially to all chefs that invovled in Pastry Artistry class for teach us and also give us a lot knowledge.But also not forget to thank to both my group members,Aliaa and Adilla and also my classmates that help us a lot during the class.

Make a chocolate modelling

On 5 September 2013,we have been told by Chef Azrul that we gonna to do chocolate modelling.So what are you understand about chocolate modelling.Let me explain a simple explaination about chocolate modelling.Modelling chocolate is a chocolate paste made by melting chocolate and combining it with corn syrup and/or a simple syrup (made from table sugar and water). Primarily used by upscale cakemakers and  to add decoration to cakes and pastries.For more information you can go to this link: http://en.wikipedia.org/wiki/Modeling_chocolate

To do this chocolate modelling,you need some ingredients which is:
For the garnishes you need:
i) 500 gm dark chocolate


ii)175 gm  liquid glucose

iii) 100 gm heavy syrup


For the base and body of this chocolate modelling,you needs:
i) 1 bag of chocolate bar ( 500 gm)


Steps to make the chocolate modelling:
1) Chopped the chocolate bar first until to small pieces.

2) Melt the chocolate first using a double boiler method and stir it until blend then rest it for a while.


3)Then start to make the garnishes by,put dark chocolate into a mixer.


4) After that,start to put a liquid glucose and let it mix together.
5) Nextt,slowly put 100 gm of heavy syrup together .
6) Let it rest in chiller room about 40 minutes and wrap it with plastic wrap.

7) Then cut the body and base according to your design and shape.



8) After the chocolate being rest,you can make your own shape according to your own creativity, eg: roses,geometric shapes and others.

9)Glue the base,body and garnishes with the remaining of chocolate.

10) Lastly,you have finished your chocolate modelling :)

"Making a house and wind mill for bread show piece "

" Making a house for bread show piece "
On 25 July 2013,Chef Azrul gaves us briefting to do another design of bread show piece.He gave us a standard size that all students must do according to his own design.He decided to gives us to do a house and wind mill.So this his roughly design of house and wind mill.

Chef Azrul also gave us the measurement of the house and wind mill.So this is the measurements of house and wind mill.

The method to the bread show piece of this design is same but this time I will make it more simple to explain to you.
 1) Firstly,as a basic of dough you must have flour,water  and a salt.

2) After that you must mix all the ingredients together until it well blend.

3) Then put a dough into a mixer.

4) Soften the edges of a dough.This will help to prevent a dough to cracking when you roll up the dough.

5) Roll up the dough until it become flat surface.

6) Then start to make your own shape and design.

7) After finish design your own design,start to bake it,to make it smooth use sand paper and lastly, glue it with sugar caramel.

Bread show piece

" Making a bread show piece "
When talking about bread show piece,we absolutely have no idea about bread show piece.So here information about bread show piece.Usually the bread show piece is use as a centrepiece during a function or in a dining hall.It functions to display the creativity and the artistic of the piece.So back to the topic, during our class that held on 25 July 2013,we managed to do our first bread show piece.First of all,we have to design to make a bread show piece.So we decided to make a Valentine theme as our piece by using love,moon,letter and chocolate as our elements to inject this Valentine's theme.

Here are the steps about how to make a bread show piece:
1) Firstly,you must have 1kg of flour and 400g of salt:
100g of flour
400g of salt

2) Then,blend a flour and salt together.Options put a little bit of water when blending dough.
                                                    Stir flour and salt together

Blend it well and add some water.

3) After it become firm,put a dough into a mixer and let it about 15 minute until the dough well blend.

4)Let a dough rest for a while.
5)Soften the edges of a dough.This will help to prevent a dough to cracking when you roll up the dough


6)Roll out the dough until become flat surface.





7) Start to cut out and make our own shape and design onto the dough.


8)Bake our dough into the oven about 40 minutes,150 degree celsius.
 



As,I'm not forget,to make our bread show piece to become steady and firm,we need to glue it with sugar caramel .Lastly,to make our bread show piece more shines and more adobrable,we used some varnish and let it dry about 30 minutes.

Here the picture before and after this piece was glue but not yet varnished it.
